Sunday Dinner

So for dinner this evening I had an 8 pack of skin on bone in chicken thighs. Took the big bone out of the thighs and heated a cast iron pan to medium and in went a little vegetable oil and some unsalted butter. Seasoned the chicken with just salt and pepper and put them in a cast iron pan, skin side down for four minutes. Then flipped over for four minutes.

Into the toaster oven on warm. Then I chopped up some onion, mushrooms and garlic. Onions went into the pan the chicken fried in on medium heat for 5 minutes, then the garlic went in until fragrant then mixed into the onions then the mushrooms. Enough fat in the pan to add a tablespoon of AP flour, and then a little white wine and water. Reduced the liquid to half volume.

Steamed some broccoli and seasoned it with salt and pepper.

Plated it up – chicken thighs with the onion/garlic/mushroom gravy and then the broccoli.

Gotta say it, keeping it simple is the best way to cook.

You’ve probably noticed a few things if you listened to all of this. The first is this is all from a period of 1983 to 1986 – that was the true rise of the synthesizer – analog and digital as well as drum machines. Having spun, created and done things with synthesizers I highly approve.

This entire music set was arrived at from wanting to replace the last track. That’s how Nocera, Strafe, Cybotron and Connie were suggested on YouTube.

A treatise on butter

Let me first state that in this house we use butter liberally. There is just no escaping it’s use – for greasing up a pan to melting with dark chocolate as a base for kick ass cream cheese brownies. Butter is a requisite ingredient.

Now until a few months ago any store bought butter was good to go. As a rule it usually is good but then I made a fateful decision. I took home some Kerry Gold butter  – in both its salted and unsalted varieties.

I shall never buy American mass produced butter again, well maybe never is too strong. There are uses for standard butter – creme brule for example. But for everything else Irish or European butter please.

Like all good cooks I taste ingredients to every dish. And I have to say this Kerry Gold Irish butter is in two words, fucking awesome.

There’s something to be said for high quality ingredients. It can elevate a dish or treat to a new dimension when the best ingredients are used in its preparation. You really don’t know until you try I suppose, but good butter is the bomb. It’s even better than butter I’ve made myself. I really must learn the black magic they use to make Irish or European butter.

Now the thing is, I haven’t listened to iTunes all that much lately. It’s either Pandora, TuneIn, etc. on my phone or computer.

Dinner Tonight: Almond encrusted salmon

Just a simple one tonight, Almond encrusted salmon and Broccoli Rabe.

I love almonds – we usually have them in the house. And I had gone looking for lobster yesterday but only found salmon. So the idea popped into my head:

Almonds would make a nice coating for salmon.

The recipe – says it’s only good for 8oz. of salmon but I used this with 1.5lbs of salmon and it came out perfectly.

1.5lb salmon, cut into 4oz portions
2 Eggs – whites only, discard yolks
1/2 cup flour
1/2 cup chopped almonds (Food processor does a nice consistency here)
Zest from one lemon
2Tbsp chopped parsley

Put almonds, lemon zest and parsley in food processor. Run it for a good minute or so. Get it all chopped up.

Empty into dish.

Season salmon with salt and pepper and dredge both sides in flour. This one gets messy.

Brush egg whites on tops of floured salmon. Then dredge salmon in almond mixture.

Over medium heat, heat two tablespoons olive oil.

Fry the salmon, almond side down, for 5 minutes, turn over and cook for 5 more minutes.

It’s delicious – simple, and being I love salmon, this rates up there with the cider/brown sugar salmon I did a couple years ago. Speaking of which I have to make that one again.

And yes, there is leftover salmon.
